Essential Brewing Tips

Simple principles that unlock the full complexity of Yemeni specialty coffee.

Use the Right Ratio

Start with 1:15 coffee-to-water (e.g. 20g coffee to 300ml water). Adjust to taste — Yemeni coffee rewards slightly stronger ratios to reveal its depth.

Water Temperature Matters

Use water between 90–96°C (194–205°F). Avoid boiling water directly on your grounds — it can scorch the delicate fruity and floral notes in light roasts.

Grind Fresh, Grind Right

Grind just before brewing. Match grind size to your method — coarse for French Press, medium for drip and pour over, fine for espresso and Moka Pot.

Bloom Your Grounds

For pour over and drip, pour twice the weight of water over the grounds first and let it bloom for 30–45 seconds. This releases CO₂ and opens up complex flavors.

Store Properly

Keep your beans in an airtight container away from light, heat, and moisture. Our roast-to-order beans arrive at peak freshness — enjoy within 4 weeks of roasting.

Taste Without Additives First

Instructions

  1. Rinse filter, add 20g medium-fine ground coffee.
  2. Bloom: pour 40ml water at 93°C, wait 35 seconds.
  3. Pour remaining 260ml in slow, even circles over 3–4 minutes.
  4. Enjoy black to appreciate Yemen's full complexity.

Tip
Look for notes of dried apricot, dark cherry, and jasmine — hallmarks of sun-dried Yemeni beans.

Instructions

  1. Fill lower chamber with hot (not boiling) water to the safety valve.
  2. Add 18g finely ground coffee to the basket — level, don't press.
  3. Heat on medium-low until coffee begins to sputter.
  4. Remove from heat immediately and stir before serving.

Tip
Pre-heated water prevents bitter grounds from cooking on the bottom chamber.
