Step 2
Essential Brewing Tips
Simple principles that unlock the full complexity of Yemeni specialty coffee.
Use the Right Ratio
Start with 1:15 coffee-to-water (e.g. 20g coffee to 300ml water). Adjust to taste — Yemeni coffee rewards slightly stronger ratios to reveal its depth.
Water Temperature Matters
Use water between 90–96°C (194–205°F). Avoid boiling water directly on your grounds — it can scorch the delicate fruity and floral notes in light roasts.
Grind Fresh, Grind Right
Grind just before brewing. Match grind size to your method — coarse for French Press, medium for drip and pour over, fine for espresso and Moka Pot.
Bloom Your Grounds
For pour over and drip, pour twice the weight of water over the grounds first and let it bloom for 30–45 seconds. This releases CO₂ and opens up complex flavors.
Store Properly
Keep your beans in an airtight container away from light, heat, and moisture. Our roast-to-order beans arrive at peak freshness — enjoy within 4 weeks of roasting.
Taste Without Additives First
Yemeni specialty coffee is complex and naturally sweet. Try your first cup black before adding milk or sugar — you may be surprised what you discover.

Frequently Asked Questions
Yemeni coffee is one of the oldest cultivated coffees in the world, with roots dating back to the 14th century. What sets it apart is the traditional natural processing method — beans are sun-dried on rooftop terraces in high-altitude mountain villages, imparting a winey, fruity complexity you won't find in washed coffees. Yemen's ancient heirloom varietals and unique terroir create a flavor profile that is truly one of a kind.
Hawaij (pronounced "ha-WHY-ij") is a traditional Yemeni spice blend used to flavor coffee and tea. It typically contains ginger, cardamom, cinnamon, and cloves. You can add a pinch directly to your coffee grounds before brewing, stir it into your finished cup, or use it to make traditional Qishr. Our Yemeni Hawaij blend uses organic single origin spices.
We recommend the Medium Roast as the best starting point. It balances the unique fruity, winey character of Yemeni coffee with a familiar dark chocolate warmth that most coffee drinkers will love immediately. Once you're accustomed to Yemeni coffee's complexity, try the Light Roast to explore its full floral and fruit-forward expression.
Every batch of Yemen Moka Legacy is roasted on demand — meaning your order is roasted fresh and shipped shortly after. This ensures you receive your coffee at the peak of its flavor window.
